Fish and Puppies!!!

My sister got a new puppy, or she thinks she did, my nieces got a new puppy.  I suppose it is a sharing situation since the girls will play with her and my sister with take care of her.  LOL.  The puppy is a cute little mix of terrier and something.

Last night we made a very tasty dinner that was super easy.  Are you noticing my cooking theme?  I like easy dinners on week nights.  I suppose if you prefer more work you could figure out how to make this harder.



Baked Tilapia

For one serving:
  • 1 tilapia fillet seasoned with garlic powder, lemon pepper, salt
  • 1 can artichoke hearts (the vegetables can be whatever you want, I have used asparagus and last night I added tomato to my husbands)
  • capers
  • lemon
  • 1 tsp smart balance light spread
Place seasoned tilapia on a piece of foil (large enough to wrap the fish and veggies in), add vegetables lemon, capers and smart balance. Enclose the fish and veggies in a foil packet.  Bake for 25 minutes at 375.  The fish comes out moist and there is a lot of lemon and buttery juice ready to place over carb of your choice.  I have done rice, quinoa and orzo.  Last night it was orzo.


Easy Orzo

For one serving:
  • 1/4 cup orzo
  • 3/4 cup chicken stock
  • salt to taste
I used the chicken stock that I made when I made chicken and dumplings not too long ago, but you could use a box if you need to.  Bring the stock to a boil, add orzo, simmer covered 11-ish minutes just like rice.  This made a 3/4 cup cooked serving.

On the side we had salad with the Awesome Balsamic Dressing.  I think I'm addicted.  This dinner logged in at 11 weight watchers points.
