Weekend Recap

This weekend felt sort of close to normal.  It started off with crawfish and beer with the husband on Friday afternoon.


Yummy.  I'm glad I am not longer on pain meds and can enjoy a beer.  See, there is always a reason to be thankful.  I am also thankful that crawfish can be enjoyed on Fridays during lent.

Speaking of lenten Fridays, I have a new recipe for you.  It combines eggs and pasta sauce again.  If you haven't tried it and you enjoy eggs (or just the whites like me) I suggest you give it a try.  This recipe was very easy.  My mom gave me the idea for this recipe from a similar one she found in Family Circle Magazine.  Here is my version:

Italian Egg Bake
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 Tbsp extra virgin olive oil
  • 28 ounces crushed tomatoes
  • 1/4 tsp oregano
  • 1/4 tsp thyme
  • 8 leaves fresh basil (2 of them sliced for garnish)
  • 4 ounces sliced fresh mozzarella cheese
  • 6 eggs
Preheat your oven to 400 degrees.  Add olive oil and chopped onion to an oven safe pan or skillet and saute until translucent, add garlic and saute another minute or two.  Add all remaining ingredients, except two leaves of basil, the eggs, and cheese and bring to a low simmer.  Simmer the sauce for at least 15 minutes; the longer you simmer, the better it tastes.

Remove your sauce from heat and crack in 6 eggs around the pan on top of your sauce.  Scatter your sliced cheese around the eggs and bake until the egg whites set, around 15 minutes.  Add the sliced basil garnish and serve immediately.  We had ours with crusty bread, but you could just as easily serve this over pasta.


It was a pretty good meatless meal.

The rest of the weekend consisted of mani/pedis with Rebecca and girls lunch on Saturday...then lots of relaxing and puzzle working.


My dear friend Kelly brought over a puzzle last Thursday when she came to visit and I finished what we had left of it over the weekend.  I do enjoy working puzzles.

There was also things to do in Italy planning....






And laundry.  Sam enjoys laundry.


It was a very exciting weekend.  I hope yours was fantastic.

Recovery Week Two

I am now officially two weeks into this surgery recovery thing.  I must say I feel much better than I anticipated that I would feel at this point.  I have not had to pop a pain pill in going on two days now.  I think that's pretty fantastic.

Don't get me wrong I am still slower moving, not allowed to work out and can definitely feel the pain if I move to quickly or in the wrong direction; but all in all I am feeling pretty good.  All the surgical tape that was on my incision is now gone and my incision has healed beautifully.  I had a follow up with the doctor yesterday and she told me she was very impressed with me; she said I looked great.  Yay.  I like to overachieve.

I am bummed that I am down to my last bouquet of flowers.  I will have to grab some more for myself next week once I am allowed to drive.  Oh, driving...I miss you.

I am still working on these tasty leftovers from my friend Rebecca.  She made me a Sweet Potato Turkey Shepherd's Pie from Skinny Taste.



I love Skinny Taste recipes.  This one is a keeper.  Yummy.

Weekly Finds

This weekend I found new pillows for the sofa on the sun porch.

This sofa was the one my mother had in her living room and when we took over the house I thought it would be great on our sun porch.  I panted the trim of the room yellow and my plan is to have a Mary Engelbreit inspired sunny room when I am finished.  I think these pillows are a fun improvement to what I had before.


I love the colors and texture of these pillows and I think they look great with the sofa.  The sofa in real life is a deep red color even though it is photographing more pink.


I will be so excited when we get the new shades for the room.

Speaking of shades, the husband hung lots of window treatments this weekend.  Let's start in the kitchen.  Here is the kitchen sink area before curtains.

Much better.  I got the idea for these curtains from my sister.  She has one like this in her laundry room.  I ordered this one and ones for the bathrooms from Target.


It is amazing how a window treatment can complete a space.

Weekend Recap

I left the house three whole times this weekend!  In case you didn't know, I am recovering from a little surgery, so leaving the house three whole times is big right now.  I am not even allowed to drive yet.

Saturday the sweet husband took me to Bed, Bath and Beyond so I could get a few curtain rods so he could hang the rest of the curtains I purchased.  He had fun hanging curtains this weekend, I am sure of it.  Thank you handsome husband.


The curtains went up this weekend in the bathrooms, master bedroom, and the kitchen.  You will see more pictures as the week goes on.

Sunday I rode with the husband to pick up dry cleaning and run to Walgreen's.  It is kind of sad to blog a picture of surgical gauze, but hey that's what's going on here right now.


Later on Sunday my dear friend Rebecca was running some errands and she was kind enough to come pick me up to go with her.  We went to...wait for it...Bed, Bath and Beyond!!  I am not particular right now.  When you cannot drive and it is a pretty day, revisiting the same store still sounds like a heck of a deal.  And I found a few other items.  I do love to shop.

My other big news for the weekend was that my new phone arrived.


I really like the Vera Bradley case I ordered and I don't know how I worked out for both packages to arrive on the same day, but I will go with it.  I am excited to not have to talk on the phone on speaker anymore.  Yay!!

The Houston Livestock Show and Rodeo is going on right now. If you have never had the pleasure of heading out to Rodeo Houston you are missing out.  It is pretty awesome.  Last year I didn't go to the rodeo very much and I was okay with that.  This year I would love to go; I think it has a lot to do with not being able to go.  So, I am living my Rodeo Houston 2013 vicariously through my sister-in-law.
