Weekend Update and Weigh In

Good morning!  I don't know about you, but I had a wonderful and relaxing weekend.  It started on Friday evening with mocktails!

Ahhh.
In my glass...sprite zero, light cranberry juice and lime.  I used one cup of the cranberry juice and spread it over 3 mocktails, so that was three drinks for one weight watchers point.  And they are delicious.  Good thing I didn't add the vodka...lol.

Saturday morning I hit the gym and then came home for an interesting lunch.  Roasted cauliflower, guacamole and rice chips.

Roasted cauliflower is delicious.  You should try it...roast with a little olive oil and garlic salt at 400 for 30ish minutes...toss when they are about halfway done.  Now the rice chips...if you haven't tried these...I recommend them.

Saturday night we had a movie marathon.  Okay, we watched two movies...and if you know me that's a marathon since usually I fall asleep during the first movie.  I might have done so well because of that 3 hour Saturday afternoon nap.  It was awesome...AND it was raining.  I couldn't not nap.  We have not had rain in a long time.  Anyway, we watched Just Go With It, which was hilarious and Limitless which was interesting.  I liked it but it was a weird thriller.  Definitely not what I was expecting.

Sunday we hit the grocery store.  I love the way my counter basket looks when it's full of fruits and vegetables for the week.

I will share a little secret.  My mom, my sister and I call these baskets our rot racks...since sometimes an unlucky item will go there to rot.  Oops.  We do try to avoid that, honest.

We watched some football (Go Texans), groaned about our horrible fantasy team, enjoyed the rain, read, napped and prepared for the week.  I got in the kitchen and did what my mother has deemed the turkey bacon marathon.


I buy the package of 4 turkey bacons at Costco and then I bake them at 400 degrees for 12 minutes, let cool and then freeze.  It means that in one minute in the morning I can have crispy turkey bacon made in the microwave.  Easy.  It is a marathon since it takes about 5 pans worth to cook 4 packages of turkey bacon.

Also in preparation for the week I made summer squash and cabbage.


I like to have some already cooked veggies on hand in my fridge for the week for lunches and quick dinners.  For the cabbage I cook it on low heat with sea salt and smart balance light and for the squash I cook it with onion and sea salt also on low heat.  Both easy, both delicious.

Sammy is a very attentive kitchen helper beggar.

I realize she is not pictured in the kitchen here, but trust me she was there.  I just thought this was a cute picture and she was begging for popcorn in it.

Sunday night I put on my flamingo jammer pants and got in my bed, with brand new clean sheets, and read.  It was a happy Sunday night!


This morning was my first weigh in with weight watchers.  It was a good morning.  I am down 5 lbs.  What a great week!  Monday morning is my weigh in day, so I will be updating you weekly on my progress.

And last but not least, the pen color of the day is this pink/purpley color.  Love it.

  2. Oh, the mocktail is SO good! If you want to make it into a cocktail, just add vodka...I'm trying to save the calories right now though! :)
